6 chicken breasts
2 Tablespoons balsamic vinegar
1 Tablespoon maple syrup
4 Tablespoons olive oil
1 teaspoon salt
¼ teaspoon black pepper
6 peaches, washed, cut in half and pits removed
2 large sweet onions, peeled, cut into ¼-inch thick rings
4 Tablespoons orange juice
2 Tablespoons olive oil
2 Tablespoons finely chopped fresh rosemary

Rinse & pat chicken breasts dry. Place in large mixing bowl. Combine vinegar, maple syrup, olive oil, salt, pepper and pour over chicken. (I adjust quantities to make sure there is plenty of the marinade to coat the chicken). Marinade for at least 2 hours or overnight. (I did it overnight). Turn chicken several times.

Grill chicken. Toss peaches and onion rings with orange juice, olive oil and rosemary. Season with salt to taste. Then grill peaches and onions until tender and slightly charred. Serve chicken with peach halves and generously top with grilled onions.
