1 Lb. smoked turkey sausage, sliced
1 medium onion, chopped
1 garlic cloves, chopped
1 - 2 tsp ground fresh chili paste or any other hot sauce paste
2 stalks of celery and some of the celery leaves, sliced
2-3 carrots, sliced
28 oz can diced tomatoes
1-2 cans (14 oz) dark kidney beans, drained
4 all spice balls
2 bay leaf's

1. Sauté the onions, garlic and pepper paste in oil in a Dutch oven until onions are transparent.
2. Add sliced celery, celery leaves and carrots, stir and cook for 5 minutes. Then add turkey sausage slices and stir everything and cook for another 5-10 minutes.
3. Add diced tomatoes, kidney beans, all spice and bay leaves. Stir and simmer on low heat for 30 minutes, stirring occasionally so contents do not stick to the bottom of the pan.

Serve over cooked rice.

This is a very popular Surinamese dish that I modified to make it somewhat healthier and to compensate for unavailable ingredients. It is my kids, my nieces and nephews favorites so hope you will enjoy it as well!
