Directions:Preheat oven to 350 ºF. Grease a 9-inch pie pan. Blend all ingredients together in a food processor. Press into prepared pan and bake for 10 minutes. Cool completely before filling with chocolate mousse. |

Ingredients: 4 eggs 1 c sugar 1 c semi-sweet chocolate chips 1/3 c milk chocolate chips 2 tsp vanilla 10 tbsp butter, room temperature 1 1/3 c heavy whipping cream 1/4 c icing sugar

Directions:Whisk together eggs and sugar over medium - medium high heat until mixture reaches 160 ºF and coats the back of a metal spoon. Remove from heat and immediately stir in chocolate chips and vanilla. Stir occasionally as mixture cools to just slightly warm. Beat butter 2 - 3 minutes until light and fluffy. Gradually add in chocolate mixture, and then beat on high speed about 5 minutes. Mixture will be light and creamy. Beat heavy whipping cream until soft peaks form. Add the icing sugar and then continue beating until stiff peaks form. Fold the whipping cream into the chocolate mixture in 3 additions. Pour chocolate filling into the crust, cover and chill at least 2 hours. Top with more whipped cream and chocolate curls before serving. Store leftovers in the fridge. |
