Ingredients: 1 Lb Ground Beef 1 Yellow Onion - chopped 2 Celery Ribs - chopped 1 Carrot - chopped 1 Green Bell Pepper - seeded, chopped 3 Garlic Cloves - minced or grated 1 Tablespoon Spicy Brown Mustard 1 Tablespoon Dried Italian Seasoning 1 teaspoon Smoked Paprika 32 ounces Beef Broth 28 ounces Fire Roasted Crushed Tomatoes 2 Sprigs Fresh Thyme Salt/Pepper - to taste 1 Green Cabbage - core removed, chopped

Directions: In large soup pot, brown ground beef. Set aside and drain any excess grease from pot (leaving approx 2-3 Tb). Over medium/high heat, sauté onion, celery, carrot and green pepper in grease. Add more oil if needed. Once vegetables are tender add garlic and sauté 1 minute. Return ground beef to to pot and add brown mustard, Italian season and smoked paprika. Stir. Add beef broth, crushed tomatoes and thyme. Bring to a boil, reduce heat and simmer 15-20 minutes. Add cabbage and simmer until cabbage is tender (10-15 minutes). Salt and pepper to taste. Add more broth or water if extra liquid is desired. Serve as is or over rice.

If following a strict Keto diet the carbs can be reduced by omitting the carrot and decreasing the amount of tomatoes.
