Rhubarb-Strawberry Coffee Cake Recipe

Ingredients: 3 c. rhubarb 16 oz. sliced strawberries 2 T lemon juice 1 c sugar ⅓ c cornstarch

Directions: |
Directions:In a saucepan, combine rhubarb and strawberries. Cover and cook 5 minutes. Stir in lemon juice. Combine sugar and cornstarch. Add to rhubarb-strawberry mixture. Cook and stir 4-5 minutes until thick and bubbly. |

Ingredients: 3 c. flour 1 c. sugar 1 t. salt 1 t. baking soda 1 t. baking powder 1 c. margarine 1 c. buttermilk or sour milk 2 slightly beaten eggs 1 t. vanilla

Directions: |
Directions:Combine flour, sugar, salt, baking soda and baking powder. Cut in margarine unitl it resembles crumbs. Beat together milk, eggs and vanilla. Add to flour and margarine mixture. Stir just until moistened. Spread ½ batter in greased pan. Spread cooked rhubarb filling over batter. Spoon remaining batter in small mounds on top. Sprinkle topping over batter. Cook in a greased 13x9x2 cake pan at 350º for 40 - 45 minutes |
