Soak beans overnight
2 cups Thompson's White Pea Beans
5 cups cold water
1 med onion, diced
1/2 TBSP salt
2 TSP cider vinegar
1 TBSP brown sugar
1/2 TSP prepared mustard
1/4 cup fancy molasses (I used 1/2)
1/2 cup ketchup
pinch black pepper
1/4 lb bacon or pork

Directions:

Soak and rinse beans - SOAK OVER NIGHT in cold water

Drain

Add 5 cups water, cover heat to boiling, simmer 30 minutes or until tender

Drain

Place onion on bottom of oven proof pot

Mix remaining ingredients and pour over onions

Add enough water to just cover beans, place bacon/pork on top

Cover and bake for 7 hours @ 250 degrees

When beans are tender, remove 1 cup and mash, then stir back into the port

Remove 1 hour before serving to darken the beans.

Salt & pepper to taste.
