Ingredients: 1 teaspoon baking soda 1 cup boiling water 1 cup dates, chopped 1 cup walnuts, coarsely chopped 1 cup sugar 1 cup mayonaise 6 Tablespoons unsweetened chocolate, grated 1 teaspoon vanilla 2 cup cake flour

Directions:1. Preheat oven to 350ºF. 2. Grease and flour 8x8" baking pan. 3. In small bowl, stir baking soda and boiling water until dissolved. Stir in dates and nuts. 4. In large bowl, mix sugar and mayonaise until well blended, add chocolate and vanilla, beat until blended. Add date mixture, beat until well mixed. Gradually add flour until smooth. Pour into prepared pan. 5. Bake for 45 to 50 minutes, or until a knife comes out clean. |

Notes: Frosting in this case, may well be the gilding the lily, and the moist, dense cake is delicious with nothing more than a simple dusting of powdered sugar and occasionally, a dollop of unsweetened real whipped cream. For those that believe the reason for eating cake is frosting; however, I suggest the no-cook fudge frosting.
