1 cup nonfat yogurt cheese
1¼ cup unsweetened apple sauce
3 egg whites
1 teaspoon vanilla
1½ cup flour
1½ cup whole wheat flour
¾ cup light brown sugar
½ cup raisins
2 Tablespoons oat bran
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons ground cinnamon
½ teaspoon salt, optional
½ teaspoon ground nutmeg
¼ teaspoon allspice

1. Preheat oven to 350ºF. Spray 9-by-13-inch baking pan with nonstick cooking spray.
2. In large bowl whisk yogurt cheese, applesauce. egg whites and vanilla until well-blended.
3. In another large bowl, combine dry ingredients. Add to applesauce mixture and beat well.
4. Pour into pan and bake 35 to 45 minutes or until cake tests done.
5. Cool slightly on rack before cutting.
