3 lbs. chicken parts or breasts
2 tablespoons butter or margarine
3 tablespoons olive oil
3 med-lg onions sliced
1 lb. mushrooms sliced
2 tablespoons flour
2 tablespoons tomato paste
½ - ¾ cup dry white wine
salt

Directions:

Lightly brown chicken parts in butter and oil in a heavy frying pan. Remove chicken to oven-proof casserole.

To the skillet juices, add the sliced onion and cook until golden. Add mushrooms and cook 2 minutes more. Sprinkle with flour, stir and remove from heat.

Add tomato paste, wine and salt. Stir throughly. Return to heat, stirring until sauce bubbles. If the sauce is too thick, add more wine.

Pour sauce over chicken, cover and bake @ 350 degrees for 30 - 45 minutes.

Beauty of this recipe is that it improves with age and is best made, than refrigerated, the day before it is served. If refrigerated before cooking, return to room temperature before baking.
