1 head garlic, roasted
1 tablespoon olive oil
465g white bread flour
9g salt
1/2 teaspoon active dry yeast
337g warm water
1 tablespoon fresh rosemary, chopped

Directions:
1-Roast the garlic, heat the oven to 425 degrees. Slice the top off the head of a garlic bulb to expose the cloves, then drizzle with 1 tablespoon of olive oil over the exposed garlic cloves. Wrap in tinfoil and roast for 45 minutes, then remove from oven and cool until the soft garlic can be squeezed out.
2-In a large bowl, combine the flour, salt, yeast, rosemary, and roasted garlic.
3- Add the water and stir to combine, just until it starts to come together in a very shaggy dough. Cover tightly with plastic wrap and let it sit on the counter at room temperature for 12-18 hours.

The final rise and baking of the boule using a Dutch oven.

De-gas the dough by lightly pressing down on it. Now tip the dough on to a lightly floured countertop. Gently flatten the dough and pull the edges inwards creating a tight ball. Place parchment paper inside a Dutch oven to create a basket. Move the dough inside Dutch oven and cover. Let rise 1 to 2 hours until double in size.
Meanwhile, pre-heat oven to 475f. Once the oven is ready, place the Dutch oven with lid on, into the oven and bake for 30 minutes. Afterwards remove lid, reduce oven to 450F and bake another 15 min to 20 minutes.
Remove from oven onto a cooling rack and leave for 1 hour before cutting.
