For the bread
357g of white bread flour
210g of warm water
1 tsp Instant yeast
6g salt
43g of soft butter
1 tbsp honey

For the crunchy topping
30g of rice flour
38g of water
1/8 tsp salt
2 tsp of sugar
1/4 tsp instant yeast
2 tsp of toasted sesame oil

Directions:
Directions:
1-In a stand mixer bowl, add in the water, honey, yeast and stir to dissolve. Let stand for 10 minutes.
2-Next add in the flour and salt. Start the stand mixer on low and using a dough hook mix for 5-10 minutes until the dough comes off the sides. Now add the butter and knead the dough for 5 minutes at medium speed. The dough should be soft, smooth, and still sticky.
3-Place the dough in a clean bowl, cover and let rise for 2 to 4 hours or until double in size.30 minutes.

The final rise and baking of the boule using a Dutch oven.

De-gas the dough by lightly pressing down on it. Now tip the dough on to a lightly floured countertop. Gently flatten the dough and pull the edges inwards creating a tight ball. Place parchment paper inside a Dutch oven to create a basket. Move the dough inside Dutch oven and cover. Let rise 1 to 2 hours until double in size.
Meanwhile, pre-heat oven to 475f. Once the oven is ready, place the Dutch oven with lid on, into the oven and bake for 30 minutes. Afterwards remove lid, reduce oven to 450F and bake another 15 min to 20 minutes.
Remove from oven onto a cooling rack and leave for 1 hour before cutting.
