3-4 boneless, skinless chicken breasts grilled
1 lb. farfalle pasta
1 green bell pepper chopped
1 cup celery chopped
1/2 red onion chopped
1/2 cup minced parsley
1 tsp. basil or fresh basil minced
1/2 cup parmesan cheese grated (or 1 cup if preferred)
2 tbsp. lemon juice
3 tbsp. white wine vinegar
2 tbsp. mayonnaise
2 tbsp. Dijon mustard
2/3 cup olive oil
Salt and pepper to taste

Cook pasta per package instructions. Drain pasta and set aside in large bowl.

Chop vegetables. Add vegetables and herbs to pasta.

Grill chicken and slice into 1 - 2 inch strips. Add chicken to pasta and vegetables.

In separate bowl, combine vinegar, mayo, mustard, salt, pepper and lemon juice. Whisk well. Add olive oil and whisk until thoroughly combined.

Add dressing to salad and toss well. Add parmesan cheese and toss.
