  • 500 g gnocchi

  • 300 g cherry tomatoes

  • 5 cloves of garlic

  • 200 ml heavy cream

  • 100 ml vegetable stock

  • 2 tbsp olive oil

  • 1 tsp salt

  • 1/2 teaspoon black pepper

  • fresh basil

  • burrata cheese

  1. Heat the olive oil in a pan over medium heat and add the cherry tomatoes and sliced garlic. Let it cook until the tomatoes are bursting and jammy, it takes about 8 minutes.

  2. Once the tomatoes are jammy, mash them lightly with a food processor and then add the heavy cream and vegetable stock. Stir to combine the cream with the tomatoes and create a creamy sauce.

  3. Then add the gnocchi and cook for about 5 minutes until the gnocchi are fully cooked. Stir to coat all the gnocchi in the sauce.

  4. Finally, top with burrata or any other cheese you like and cover to melt the cheese perfectly. It takes only few minutes. Garnish with fresh basil and serve!
