2 large zucchini
½ cup yellow bell peppers, diced
½ cup red bell peppers, diced
2 cups cheddar cheese, shredded
4 (4.2 oz. each) boneless chicken
breasts, cubed
1 tbsp olive oil
2 tbsp paprika
1 tsp salt
1 tsp pepper

Preheat oven to 350°F
Cut each zucchini in half, trimming the ends. Using a spoon, scoop out the flesh.
In a large bowl, mix chicken breasts, paprika, salt and pepper.
To a large skillet over medium high heat, add olive oil. Add chicken breasts and cook for about 5 minutes, stirring throughout.
In a large baking dish, add zucchini boats. Place the chicken breasts in the boats, and top with red bell peppers, yellow bell peppers, and cheddar cheese.
Place in oven and bake for 20 minutes.
Garnish with mint leaves if you desire.

TIPS
If you like it saucy feel free to toss the chicken breasts in marinara sauce before baking.
If you like it spicy use Pepper Jack cheese instead of cheddar cheese.
