3/4 C flour
1/4 C cornstarch
1/2 tsp salt
1/2 tsp baking powder
1/4 tsp baking soda
3/4 C buttermilk
1/4 C milk
6 T oil
1 egg, separated
1 T sugar
1/2 tsp vanilla

Directions:
Directions:
Mix dry ingredients except sugar in a medium bowl. Measure liquids egg yolk and add oil in a 2 cup measuring cup. Stir well. Beat egg white in a small bowl with an electric mixer to soft peaks! Sprinkle in sugar and continue beating until glossy. Stir in vanilla. Pour wet ingredients into dry ingredients and whisk until just mixed. Gently fold in egg white with spatula just until incorporated. Heat waffle iron and spray if necessary. Add 1/2 to 3/4 cup to hot waffle iron and cook until steaming stops and waffle is crispy. Keep warm in a 200 degree oven on a rack.
