Ingredients: Infused sugars, flavored with herbs, spices, or citrus zest, are aromatic and often colorful. The flavors from infused sugars transfer into whatever you are using them to make. The sugars work well in desserts, sauces, drinks, jams, and even homemade ice cream. They can also be sprinkled on cookies prior to baking or on berries or cut-up fruit in place of regular granulated sugar. Fun to make! Basic Instructions: To Prepare CITRUS ZEST Wash and dry fruit. Peel the fruit's outer rind with a vegetable peeling knife, avoiding the white pith underneath. Use a grater or zester to finely grate or zest the rind. Spread the zest on wax paper and let dry for several hours or overnight before using. To Infuse SUGAR Pour sugar into a clean, dry jar with an airtight lid and add the zest. Shake the jar periodically to prevent clumps of sugar from forming due to the moisture. On the third day, pour the contents out onto wax paper and let dry completely. Break up any clumps of sugar. Then pour everything back into a clean, dry jar and let sit for two weeks, shaking occasionally. To Prepare VANILLA BEAN SUGAR 1 cup granulated sugar Infuse the sugar according to the Basic Instructions. Slice down the length of the vanilla bean and scrape seeds into the jar with the sugar. Break the empty pod into pieces and place in the jar as well, but remove before using the sugar. To Prepare CITRUS SUGAR Zest of 1 lemon Zest of 1 orange 1 1/2 to 2 cups granulated sugar Prepare the citrus zest and infuse the sugar according to the Basic Instructions. This sugar adds extra sparkle to lemon-flavored baked goods and desserts. To Prepare LIME-MINT SUGAR Zest of 3 limes 1/2 cup finely chopped fresh mint 1 1/2 to 2 cups granulated sugar (depending on jar size) Prepare the citrus and zest and infuse the sugar according to the Basic Instructions. This sugar is good in tea and alcoholic drinks.
