3 tbsp. melted butter
3 tbsp. flour
½ cup onion
½ cup celery
½ cup bell pepper
1 tbsp. garlic
salt and pepper to taste
1 can mushroom soup
1½ cup stock
1 lb. crawfish tails
green onions
parsley

Directions:
Directions:
Mix melted butter with flour. Whisk and simmer over medium heat. Add onion, celery, bell pepper, simmer and stir often then add garlic simmer add salt and pepper. Stir in mushroom soup and stock add crawfish tails, let simmer add parsley. Simmer 20 minutes. Serve with rice and green onions.
