6 Fresh pasta lasagna sheets
2 lb ricotta
1 egg
12 ounces shredded mozzarella
1 cp grated locatelli cheese
Parsley

Directions:
Directions:
Mix ricotta, egg, ½ mozzarella, parsley and locatelli. Lay 2 pasta sheets end to end to make 1 long sheet. Spread a thin layer of ricotta mixture on pasta, to about ½ inch of end to prevent it oozing out. Roll jelly roll style. Put in freezer for a couple hours. Take them out and slice into 1 inch wheels and lay them on a cookie sheet and freeze until frozen solid. Transfer to plastic bags to freeze for later use or put in baking dish covered with sauce, top with remaining mozzarella and bake covered with foil until hot.
Approximately 45 min to 1 hour from frozen. 30 minutes fresh or thawed.

Joe and's I had these at a restaurant so I recreated them at joes request. I keep them on hand in the freezer for a quick meal or last minute company.
