1½ lbs. green beans, trimmed
1 small red onion, chopped (½ cup)
1 cup lemon vinaigrette
2 ounces crumbled feta cheese (more if desired)
½ toasted pine nuts
Garnish: Lemon Slices

Directions:
Directions:
Cook beans in salted boiling water until slightly tender. Don’t over cook. Plunge into ice water to stop the cooking. Drain on paper towel and chill for 2 hours.

Place chilled beans in serving bowl. Add chopped onion, and lemon vinaigrette, tossing to coat. Sprinkle with feta and nuts.
