Hamburger Veggie casserole Recipe

32 ounce package of hash browns
1 pound ground beef
1 cup diced onion, optional
1 cup diced celery, optional
1 package Beefy Lipton onion soup mix
2 tablespoon Worcestershire sauce
1 teaspoon salt, optional
1/2 teaspoon pepper
1 can cream of mushroom soup
2 cans mixed vegetables, drained
1/2 cup shredded cheddar cheese

additional cup of shredded cheddar cheese for topping

Directions:
Directions:
Heat large skillet over medium high heat; add 2 tablespoons vegetable oil. Brown all of the hash browns in the skillet, adding additional oil if needed. Remove hash browns from skillet, dividing in half.

Place half of hash browns in bottom of 9 x 13 baking dish. Set aside.

Using same skillet, add a little more oil and cook onion and celery until soft. Add ground beef and cook until no longer pink. Drain.

In large bowl, mix vegetables, dry soup mix, Worchestershire sauce, salt, pepper, cream of mushroom soup, and 1/2 cup cheese. Add cooked ground beef mixture. Pour over layer of hash browns in baking dish. Top with the rest of the hash browns.

Sprinkle with remaining 1 cup of cheese.

Bake at 350º for 30-40 minutes or until bubbly.
