apples
3 3/4 cups water
1 1/2 t. cinnamon
2 3/4 cup sugar substitute (equivalent to 2 3/4 cup sugar)
3/4 cup ClearJel
1/2 cup. lemon juice

Directions:
Directions:
1. Peel and slice apples - cover with lemon water (cut thicker slices)
2. Blanch apples for 1 minute in boiling water.
3. Keep apples warm.
4. Mix together: water, ground ginger, nutmeg, cinnamon, sugar substitute, ClearJel.
5. Bring mixture to a boil - stir constantly until mixture thickens
6. Add 1/2 cup bottled lemon juice
7. Fold apples into thickened mixture.
8. Fill jars to 1" headspace.
9. Waterbath can.
