600 grams trimmed veal , preferably silverside or topside

2 eggs

Salt

Plain flour

Dried breadcrumbs

Vegetable oil or clarified butter

Directions:
Directions:
Beat the eggs with a fork

Gently pound the schnitzel and season each side evenly with salt .

Lay the schnitzel in the flour , covering both sides with flour .

Coat first with the beaten eggs and then with the breadcrumbs on both sides , pressing lightly .

Fry in hot oil or clarified butter for 3-5 min until brown , and drain .

Garnish with lemon . Guten Appetit !
