1 lb. ground beef
salt to taste
1 cup cornmeal
½ tsp. salt
1 small onion, grated
½ lb. cheddar cheese, shredded
4 jalapeño peppers, chopped
3 eggs, beaten
1 cup milk
1-17oz. can cream style corn

Directions:
Directions:
Season beef with salt and sauté in heavy skillet, drain and set aside. Combine cornmeal, ½ tsp. of salt, onion, cheese, and peppers in a large bowl, mix well. Stir in eggs and milk and add to dry ingredients. Stir just to moisten. Add corn and blend well. Spoon half the batter into a greased 2 quart casserole dish, cover with ground beef and top with remaining batter. Bake at 350° for 45 minutes.
