4-5 Small/Medium Russet Potatoes
Oil (Olive, Vegetable, or Canola all work fine)
Any Cheese, Shredded
4 Green Onions, Chopped
Sour Cream

Directions:
Directions:
1. Scrub the russet potatoes clean and cut into approximately 1/2-inch slices. This is thick enough so they don’t shrink down to potato chips, but thin enough so they bake through nicely.
2. Brush lightly with olive oil and season with salt and pepper.
3. Bake at 375°F for 35 minutes.
4. Top with shredded cheese and chopped green onions. Bake for 5 minutes, or until the cheese is golden brown.
5. Serve with sour cream.

* Baked potato slices freeze well! (Just leave out the green onions.) To reheat, bake at 325° for 8-10 minutes.
