2 lbs ground beef
1 lb ground pork
1 lb ground veal
1 large onion, grated
2 carrots, shredded fine
4 - 6 garlic cloves, chopped fine
2 tsp salt
2 tsp Dijon mustard
1 tsp pepper
1 tsp rosemary
1/4 tsp nutmeg
1/2 tsp Tabasco sauce
3 eggs, slightly beaten
3/4 cup fresh bread crumbs soaked in 1/2 cup cream
12 strips bacon

Directions:
Directions:
Combine the meats, onion, carrot, and seasonings.
Mix in the eggs and soaked crumbs.
Make a bed of 8 strips of bacon in the bottom of a shallow baking pan.
Form the mixture into a firm loaf and place over the bacon.
Top with the remaining bacon.
Bake at 350º for 1 1/2 - 2 hours, basting several times.
