2½c. All Purpose Flour
3tsp. Baking Soda
1/4tsp. Salt
1/2tsp. Ground Cloves
1/2tsp. Ground Nutmeg
1½tsp. Ground Cinnamon
1/2c. Vegetable Oil
1½c. Granulated Sugar
1c. Chopped Dates
1c. Chopped Pecans
16oz. Applesauce
2 Eggs, room temperature

Icing:
6tbsp. Light Brown Sugar
2tbsp. Heavy Cream
4tbsp. Salted Butter
Powdered sugar

Preheat oven to 325ºF

Sift flour once, and add the baking soda, salt and spices. Sift together three more times. Mix the vegatable oil with the sugar until creamy. Add eggs and beat well. Add applesauce and blend well. Slowly add the dry ingredients until well incorporated. Fold in the chopped pecans & dates.

Add batter to an angel food or bundt cake pan that is lined with greased waxed paper. Bake for 1 hour 35 minutes or until a toothpick comes out clean.

Add brown sugar, cream and butter to a medium saucepan and heat on medium heat, stirring often until mixture is thickened. Slowly add powdered sugar until you reach the desired consistency to ice the cooled cake.

Decorate with whole pecans.

Grandma's note to me: This was a small recipe I kept working with until I got enough for an angel food pan. Be sure and put wax paper all around the tube and bottom of pan. Important to come out good. Let cool before turning out on a stand. Everyone says it is a wonderful cake. I've made it a bunch! I enjoy doing it but it was a slow time coming. Good luck!
