2-3 T packed brown sugar
2 1/2 t. paprika
2 t. garlic powder
2 t. onion powder
1 1/2 Kosher salt
1/2 black pepper
4 lb. beef chuck roast
2 T. yellow mustard
1 1/4 cups beef broth
1/2 t. liquid smoke, optional
3 T butter, cut into 3 slices

Directions:
Directions:
Combine brown sugar, paprika, garlic powder, onion powder, salt, and pepper in small bowl, this is the rub. Set aside. Place chuck roast in crockpot, and drizzle the mustard onto the meat. Sprinkle with half the rub. Turn meat over, and sprinkle with the remaining rub. Pour in the beef broth into the crockpot, and the liquid smoke (if using), but not over the meat. You don't want to wash away the topping off the meat! Top the meat with butter slices. Cook on low for 6-7 hours, or until roast is fork tender. remove roast from crockpot to a cutting board, and shred, or break into pieces, discarding large fat pieces. Serve with barbecue sauce, if desired.
