24 Biscoff cookies, divided
1 cup Butter
1 cup Brown Sugar, packed
½ cup Sugar
2 Eggs
2 tsp Vanilla
1 cup Biscoff Spread
2¾ cups Flour
2 tsp Cornstarch
1 tsp Baking Soda
½ tsp Baking Powder
½ tsp Salt
1½ cups White Chocolate Chips

Directions:
Directions:
In a food processor, pulse 16 of the Biscoff cookies into fine crumbs. Set aside. Reserve the 8 remaining Biscoff cookies for decorating the tops of the cookies.
In a large bowl, cream the butter, brown sugar, and granulated sugar for 3-4 minutes.
Add the eggs and vanilla, then beat again, stopping to scrape the bottom and sides of the bowl. Add the cookie butter and mix until combined.
Add the flour, reserved 1 cup of cookie crumbs, cornstarch, baking soda, baking powder, and salt. Mix on medium-low speed just until combined. Stir in white chocolate chips.
Bake at 350º for 9-10 minutes just until set but slightly under-baked in the middle so they stay soft.
