1 lb fresh Brussels sprouts
1 sliced carrot
juice of 1 lime
salt
pepper
pine nuts
olive oil

Directions:
Directions:
Soak the brussels sprouts in warm water for about 10 minutes, then rinse and halve.
Steam the brussels sprouts and carrot for 3 - 5 minutes, until the brussels sprouts turn bright green.
Transfer to a greased baking dish, sprinkle with the lime juice, and toss with just enough oil to coat.
Add the pine nuts and season with salt and pepper.
Bake at 350º for 15 - 17 minutes, stirring every 5 minutes, and adding more oil if needed.
Broil for 2 - 4 minutes, until crisped, then cool and serve.
