3 beaten eggs
1 C milk
1 C sifted flour
3 tbls melted butter and cooled
1/4 tsp salt

Preheat oven to 450 degrees.

Using 1/2 teaspoon shortening for each cup, grease the bottoms and sides of a popover pan. In a medium bowl using a wire whisk, beat eggs and milk until combined. Add butter, flour and salt; beat until smooth. Fill the prepared cups half full with batter.

Bake 15 minutes. Reduce oven temperature to 375 degrees and bake 30 more minutes until brown. Do not open oven door! until they are done. Serve immediately.

Custard cups or muffins tins can also be used. Set on a cookie sheet.

My older sister, Joan would make these when we were growing up. It is fun watching the popovers really "pop over" in the oven! Make sure you have the grape jelly/jam ready when they come out of the oven. No butter is needed.
