1 (9 inch) pie crust
3/4 C Swiss cheese
3/4 C Mozzarella cheese
1/2 C Pepper Jack cheese
2 T green onion, chopped
1 can chopped green chiles, drained
3 eggs, beaten
1 C half & half
1/2 tsp salt
1/2 tsp pepper
2 tsp fresh Italian parsley, chopped
1/4 tsp oregano

Pre-bake pie shell: Preheat oven 400 degrees. Bake for 5 minutes. Remove from oven and prick a few holes with fork. Bake 5 minutes longer. Reduce oven temperature to 350 degrees.

Grate all the cheeses and combine with onion. Sprinkle in bottom of pie crust. Combine rest of ingredients and mix well. Carefully, pour into pie shell.

Bake on 350 degrees for 45 minutes. Allow to stand 10 minutes before cutting into wedges. If you want to serve as an appetizer, trim pastry to fit a square 8x8 inch pan and bake per instructions.

Can add, chopped ham, cooked sausage, spinach, or jalapeņos to mixture.
