1 1/4 C flour
3/4 C buttermilk
1/4 C milk
1 tsp sugar
1/2 tsp baking soda
1/4 tsp baking powder
1/2 tsp salt
1 egg
3 T melted butter
1 tsp vanilla

Directions:

Combine all ingredients in mixing bowl and whisk lightly. It’s ok if you
have some small lumps.

Heat a small amount of oil in a 10 - 12 inch frying pan. Put a few drops of water in to see if they bubble up to test the heat. When hot, remove excess oil with paper towel. Reduce heat and pour 1/8 - 1/4 cup batter for each pancake depending on what size you want. When they bubble around the edges and middle, turn over once and cook the other side. Watch them or they will burn, if the pan is too hot.
