Chili Lime Chicken |

Ingredients: 1 lb. Chicken Breast ¼ cup Olive Oil 2 Limes, juiced 1 teaspoon Chili Powder ½ teaspoon Cumin 1 teaspoon salt

Directions:1. In a large ziploc bag, place chicken breast, olive oil lime juice, chili powder, cumin and salt. Let marinate for at least 30 minutes, preferably 2-4 hours or overnight. 2. Heat grill to medium heat. 3. Remove chicken from marinate and place on hot grill. Cook for 6-8 minutes per side, or until chicken is no longer pink. Time is an estimate as it depends on the thickness of the chicken breast. It roasting ears of corn, add them to grill for several minutes. Remove from grill and remove kernels with knife. After grilling, let rest for at least 5 minutes to let juices seep into chicken. 4. Slice chicken on the diagonal. |

Make cilantro ranch dressing and homemade guacamole, if you desire. 5. LYWE IN. Bowl - rice, beans, grilled chicken, pico do gallo, avocado, roasted corn, and cilantro ranch dressing. |

Ingredients: 1 cup buttermilk 1 cup mayonnaise ⅓ bunch fresh cilantro, or to taste 1 fresh tomatillo, husk removed, or more to taste ½ lime, juiced ½ jalapeno pepper, stemmed and seeded, or more to taste 1 (1 ounce) package dry ranch dressing mix (such as Hidden Valley Ranch®) 1 clove garlic, peeled ⅛ teaspoon freshly ground black pepper, or more to taste

Directions:Blend buttermilk, mayonnaise, cilantro, tomatillo, lime juice, jalapeno pepper, ranch dressing mix, garlic, and black pepper together in a blender until smooth. Refrigerate until flavors blend, at least 1 hour. |

Notes: This is somewhat spicy (depending on your ingredients) and flavorful. Generally, it’s is filled with good nutrition and so tasty. I love this as one can customize ingredients to your liking. And, it’s a full meal!
