3 c fresh raspberries, bing cherries or blueberries/saskatoons
½ c sugar

Batter
1 c butter, room temperature
1 c sugar
2 eggs
1 tsp vanilla or almond flavouring
2¼ c flour
1 tsp baking powder
pinch of salt

Glaze:
1 c icing sugar
water, milk or cream or lemon juice

Directions:
Directions:
Combine fresh fruit and sugar in a bowl and set aside.

Cream butter, sugar, eggs and flavouring.
Carefully add dry ingredients. Batter will be thick.
Press half to two thirds of batter into 9 x 13" pan. (I like to line with parchment paper)
Bake 8 minutes at 350º then remove from oven. Top with sugared berries. With wet hands put remaining batter over top by taking clumps and pressing into random shapes. It will not cover top completely which is fine, Return to oven and continue baking for another 25-30 minutes. Toothpick should come out dry (except for berry colour)
As cake cools, mix glaze by adding which ever liquid you choose to the icing sugar to make a slightly thin icing. Drizzle over top of cake.

Baking the bottom crust 8 minutes before topping is not an option. Its the difference between turning out well and total failure. Don't ask me how I might know this.
