Dressing:
1/2 c mayonnaise
1/4 c sour cream
2 T honey (instead of honey, use Stevia for low-carb)
1 T Dijon mustard
1 T poppy seeds
Salt, to taste
Salad:
4 c chicken breast (about 2 chicken breasts)
1 c pecans, chopped
1/2 c dried cranberries
4 green onions, chopped
For more crunch you can add chopped celery or apples

Dressing:
In medium bowl, combine mayonnaise, sour cream, honey, Dijon mustard, and poppy
seeds. Whisk until smooth and creamy. Add salt to taste.
Salad:
In large bowl, mix together chopped chicken, pecans, dried cranberries, and green onions.
Pour the dressing over the salad mixture and toss everything together until well coated
Taste and add more salt, if needed. Serve immediately or chill a few hours.
