2 pounds okra

3 tablespoons olive oil

½ tablespoon garlic powder

½ teaspoon kosher salt or sea salt

¼ teaspoon black pepper

Preheat the oven to 450 degrees Fahrenheit.

Prepare the okra to be roasted by cutting off the stem and tip of each pod and slicing the pods in half lengthwise.

In a large bowl, add the olive oil, garlic powder, salt, and pepper to the sliced okra.

Using your hands or a wooden spoon, stir the okra until the vegetables are completely coated in the seasoning mix.

Transfer the okra to a parchment-lined baking sheet and spread the vegetables out in a single layer.

Place the baking sheet in the oven and roast the okra for 20 minutes, shaking the pan once halfway through the roasting time.

Remove the sheet pan from the oven and decrease the temperature to 175 degrees Fahrenheit.

When the oven temperature has reached 175 degrees, return the pan to the oven and crack the oven door slightly to vent.

Bake the okra chips until completely crisp, about 3 hours.

Remove the okra from the oven and allow the chips to cool for 10 minutes before serving them warm.
