1 can (14 oz) artichoke hearts, drain & rinse
½ cup grated Parmesan cheese
½ cup breadcrumbs (Panko works well for extra crunch)
2 cloves garlic, minced
1 tsp dried oregano
Salt and pepper, to taste
1 egg, beaten
Olive oil spray (or a drizzle of olive oil)

Preheat Oven: Preheat your oven to 400°. Line a baking sheet with parchment paper.
Prepare Mixture: In a bowl, combine the Parmesan cheese, breadcrumbs, minced garlic, oregano, salt, and pepper.
Coat Artichokes: Dip each artichoke heart in the beaten egg, then coat it in the Parmesan mixture. Place the coated artichoke hearts on the prepared baking sheet.
Spray with Oil: Lightly spray or drizzle the coated artichokes with olive oil for extra crispiness.
Bake: Bake in the preheated oven for about 20-25 min until golden brown and crispy.
Serve: Remove from the oven and let cool slightly before serving. Enjoy with a dipping sauce like marinara or garlic aioli!
