2 Rib Racks

Spice Rub:
3 Tbsp cumin
2 Tbsp dried oregano
1 Tbsp chili powder
1 Tbsp kosher salt
2.5 Tbsp brown sugar
1.5 Tbsp fennel seeds (ground)
3 Tbsp Chinese 5 Spice
1/2 tsp cayenne

Cook the Ribs:
1. Position rack in center of oven and preheat oven to 300ºF
2. Sprinkle and press 1/4 cup of rub on both sides of each rib rack.
3. Put racks, meaty side up, on broiling pan.
4. Lightly season with salt and put into oven for 2 hours.
5. After the first hour, rotate the pan every 30 minutes. The ribs will sizzle gently as they cook and they will become tender after 2 hours in the oven. To test for doneness, pick up center of ribs with tongs; The ends should flop downward. Depending on the oven, ribs may need 3 hours

Meanwhile, make dipping sauce:
1. In medium saucepan over medium heat, bring soy sauce, sugar, rice vinegar, ginger, sesame oil to a simmer, stirring occasionally
2. Remove from heat and let cool
3. The sauce will stay for a week in fridge

To Serve:
1. Put ribs meaty side down. They are easier to slice
2. Stack ribs for festive presentation (2 ribs vertical, 2 ribs horizontal). Drizzle with some dipping sauce. Garnish with sliced scallions
