4 veal shanks
1/4 cup all-purpose flour
2 Tbsp butter
2 Tbsp olive oil
1 Tbsp thyme
1 onion, chopped
1 celery stick, chopped
1 carrot chopped
1/2 cup white wine
1.5 cups whole tomatoes from can
1 pinch salt and ground black pepper to taste
1 cup veal or chicken stock
1/4 cup chopped fresh parsley
1/2 lemon, zest
2 bay leaves

Directions:
Directions:
1. Season the veal shanks with salt, pepper, and thyme and then dust with flour.
2. Heat the butter and olive oil in a large skillet over medium heat.
3. Saute the shanks until golden brown on each side.
4. Remove the meat to a temporary platter.
5. Add to the skillet the onion, carrot, and celery and saute for 5 minutes.
6. Pour in white win and cook until reduced by half. Then stir in tomatoes and cook for 2-3 minutes.
7. Add meat stock and bring to a boil, then reduce heat.
8. Return the veal to the pan with bay leaves.
9. Let simmer about 1 hour at low heat, partially covered.
10. Remove from heat and place the meat and sauce on a platter with salt and pepper to taste.
