Pour canola oil in a 9-inch cast iron pan and place in cold oven, then heat oven to 350°F.

While the oven comes to temperature, combine hash browns, condensed soup, shredded cheese, chopped bacon, 3 tablespoons of chives, and salt and pepper, to taste, in a large bowl.

When the oven reaches 350°F, remove the hot cast iron pan and carefully add the hash brown mixture. Spread evenly with a spatula, then top with crushed potato chips.

Bake casserole on center rack of oven until center is heated through and cheese is bubbling, 45-55 minutes. Remove from oven and let cool slightly. Top with remaining chives. Serve with a dollop of sour cream.
