Ingredients: 1 lb. ground beef 1 1/4 package taco seasoning (see comments below). 1 15-oz. can refried beans 2 c. Colby Jack cheese 1 c. salsa 1 2/3 oz sliced black olives 1 tomato chopped 1/8 c. jalapenos 2 c. corn chips crushed

Directions:In a large skillet brown ground beef and drain. Add taco seasoning and cook according to package directions by adding the amount of water stated on package. Set aside. Heat refried beans in a medium sauce pan until hot. Stir in 1 c. cheese and 1 c. of salsa. Stir until combined. Place crushed corn chips on the bottom of an 8 by 8 casserole dish. Pour the bean mixture over the chips. Add the taco meat over the bean mixture. Sprinkle the remaining cheese over the top of the taco meat. Sprinkle green onions and black olives over the cheese. Bake at 375 degrees until the cheese has melted and casserole is heated through. Take out of the oven and sprinkle with chopped tomatoes. |

Notes: I make my taco meat using 1/2 chopped onion browned with the ground beef. I then drain it and add 1/2 can of El Pato tomato sauce and simmer for about 10 minutes. It just depends on which taste you prefer. I also make my own salsa and refried beans.
