¼ c. + 1 ¼ T milk (80 g)
3 t. Sugar, divided
1 ¼ t. yeast
⅔ c. cream (heavy or whipping cream)
2 ¼ c. + 2 ½ T bread flour (300 g)
1 t. Salt

Directions:
In a stand mixer activate the yeast by adding warmed milk, 1 t. Sugar, combine, sprinkle the yeast on top. Let sit 10 minutes.

Add cream, remaining sugar, and flour. Knead 2-3 minutes, then add salt and knead for 10 minutes. Dough will be soft and elastic, compact and tacky.

Form dough into ball, then place dough into greased bowl; cover and let rise in a warm, draft free area until doubled, approximately 2 hours.

Form into 3 balls (approximately 180 g each). Place into greased bowl 8 - 9” bread pan. Cover and let rise until doubled, approximately 1 hour.

Preheat oven to 350º.

Brush dough with milk and bake 30 minutes, or until done.
