Pork and Sweet Potato Stew Recipe

2 t Paprika
1 t Chili Powder
1 t Onion Powder
1 t Garlic Powder
¼ t Ground Cumin
⅛ t Ground Cinnamon
1 t Salt (Unrefined or sea salt)
½ t Black Pepper
1 T Fresh Lime juice
1 ½– 2lbs Pork Shoulder Roast (I like to use Boston Butt roast)
1 Large Sweet Potato, peeled and cut into ½ inch chunks
1 (14 ounce jar) diced tomatoes with their juices
2 C Chicken or Pork Bone broth
1 C Cilantro, roughly chopped

Mix the paprika, chili powder, garlic powder, onion powder, cumin, cinnamon, salt and pepper in a small bowl, then add the lime juice and stir to make a paste. Place the pork in a 6 quart slow cooker and rub evenly with the spice paste.

Add the sweet potato cubes, tomatoes, and broth. Cook on low for 8 hours. After cooking, shred the pork with two forks and return to the pot. Stir in the cup of cilantro and season with additional salt and pepper if desired. Serve with a dollop of Greek yogurt and lime juice.
