1 cup uncooked white rice which should yield about 3 cups of cooked rice
1 can, 8 oz, crushed pineapple
1 T soy sauce
1/4 c diced onion
1/2 c cashews - you may substitute peanuts, or pecans if you prefer
2 T cooking oil

You may additionally add, peas, carrots, fried egg, pork, chicken to this dish also. Fried rice is generally made with whatever you have on hand so feel free to add anything you want.

Cook the rice as you usually would. Fried rice is always best if you cook the rice ahead of time and allow it to cool in the refrigerator for 24 hours. You may cook the rice and use it right away for this dish but the rice will be a bit stickier.

Heat a large fry pan or wok until it is very hot. Add the oil. Saute the onion until it is translucent.

Add the rice, pineapple, soy sauce and cashews to the pan and continue to cook until the rice is warm.

Add any additional ingredients and heat until warm.

Serve.


If you use fresh pineapple, serve the fried rice in the pineapple after you have carved out the flesh

We used this recipe for a community dinner. Cook 4 lbs of rice in a large steamer pan and allow to cool overnight.
