ROAST:
8 large New Mexico (Hatch) chiles
1 lb tomatillos, peeled and wash
2 medium jalapenos
2 cloves of garlic, peeled
1 small onion, chopped in half
1 tsp kosher salt
BLENDER:
1/2 tsp. salt
1/2-1 C cilantro, chopped
2 T lime juice
1 tsp salt
1 tsp oregano
1 tsp cumin
1/4 C chicken stock

Directions:
Directions:
Preheat oven to 400 degrees. Use two roasting pans. Spread all the chiles, tomatillos, jalapenos, garlic and onion between two sheet pans. Drizzle with 2 tsp olive oil and salt. Roast for 30 minutes. Turn peppers as needed to roast. Remove peppers to a zip lock bag and let steam for 10-15 minutes. Remove and peel peppers. Place in blender with all the other ingredients including onion and garlic.

Serve with chips or sauce for Mexican dishes.

NOTE: The best green chiles are grown in Hatch, New Mexico. They are mild but use Anaheim green chiles if they are not available. Harris Teeter usually has them when they are in season early August-September but make sure they are fresh.
