Passover Apple Cake Recipe

6 eggs
1 c. oil
2 c. sugar
2 c. cake meal
2 t. potato starch
1/4 t. salt
Filling:
3/4 c. sugar
2.t. cinnamon
1/3 c. orange juice
4 Granny Smith apples peeled and sliced
1/2 c. raisins
1/4 c. cinnamon sugar mixture for topping

Preheat to 350º. Spray a 9" tube pan with Pam. Place parchment paper on the bottom of the pan. Mix the filling ingredients together in a bowl and add the apples. Do not add the raisins Set aside. Beat the eggs and sugar until well blended. Slowly add the oil. Sift together the cake meal, potato starch and salt. Slowly add it to the egg mixture. Pour 1/3 into the tube pan. Drain 1/3 of the apples and spread on the layer. Sprinkle with 1/2 of the raisins. Add another layer of egg mixture and drain more apples. Layer on the mixture and sprinkle the raisins. Add the balance of the mixture. Drain and place the apples around the top. Do not put raisins on the top as they will burn. Sprinkle the topping sugar over the apples and bake for approximately 1 hour. Test to make sure it is done, if not add a bit mor r time. Cool completely in the pan before trying to remove it. Springle a it of confectionary sugar on it before serving.
