5 lbs russet potatoes
3 extra large or 4 large eggs
3 large onions
½ cup matzo meal
¼ cup canola oil
salt and pepper to taste

Directions:

Preheat oven to 350º

Pour the oil into a 9 x 13 baking dish or pan and place in oven. Check to make sure that oil doesn't burn.

Grate onions first. (I use a food processor) Place in bowl.
Then grate potatoes. (I use a food processor)
Place in bowl, mixing as you add so that the potatoes do not turn brown.
Drain onion and potato mixture well and squeeze out extra liquid.
Beat eggs in separate bowl and then add to potato mixture.
Add matzo meal and mix well.

When the oil is hot enough to sizzle, carefully pour in the potato mixture.
Brush a very small amount of oil on top of the potato mixture.

Bake for 1 - 1½ hours until the top is browned.
