1 c. flour
1/2 t. salt
1 T. sugar
3 eggs
2 c. milk
1 T. rum
2 T. butter, melted

Directions:
Directions:
Sift together ingredients in a mixing bowl. Beat eggs, add milk & rum, and stir into flour mixture. Blend in melted butter. Let batter sit 2 hours to improve flavor & texture.

Heat 6" skillet or crepe pan and brush bottom lightly with melted butter.
For each crepe pour 2 T. of the batter and quickly rotate the pan to spread the batter uniformly over the bottom. Cook over medium heat 1-2 minutes or until underside is brown and bubbles have formed on top.

When each crepe is cooked, sprinkle confectioners' sugar on it. Stack each crepe in pancake fashion in a pan lined with a clean towel and when all are cooked, fold the ends of the towel over them.

Just before serving, heat crepes without unwrapping, in 350 degrees oven about 10 minutes. Sprinkle with confectioners' sugar, syrup, or honey. Or spread them with jelly. Serve.
