2 chicken breast fillets (see below)
1 cup flour
2 eggs, beaten
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
1 tbsp. dried Italian seasonings
1/2 tsp. garlic powder
salt and pepper to taste
1/2 cup olive oil
2 cups tomato or spaghetti sauce
1 cup shredded mozzarella cheese
1/2 box Rigatoni pasta

1. Preheat the oven to 400 degrees.
2. Prepare baking dish with vegetable spray.
3. Cook pasta according to package directions.

Prepare Coating by using three separate shallow bowls:
One for flour, one for eggs, one for breadcrumbs & all seasonings.

4. Coat each chicken breast in flour, eggs, breadcrumb mix.
5. Heat a medium size skillet on medium-high heat.
6. Cook chicken breasts in olive oil for about 2-3 minutes per side.
7. Place in baking dish, add tomato sauce and cheese.
8. Bake for 10-15 minutes. (see below)

Place chicken breasts in a plastic bag and with a kitchen meat mallet (hammer type utensil) evenly flatten out the chicken.

Serve with a small ready mixed salad.

Freeze remaining chicken in a single serve container.
