1 lb. ground beef
1 med. onion, chopped
1 med. bell pepper, chopped
1 can (10-oz.) diced tomatoes with green chilies
1 packet taco seasoning
1 can (8 oz.) refrigerated biscuits
1 cup sour cream
1 cup mayonnaise
1 packet Ranch dressing mix
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
Optional: jalapenos for added heat

Directions:
Directions:
Preheat oven to 350º. Grease a 9"x13" baking dish.
Brown ground beef in a large skillet over medium heat. Add onion and bell pepper; cook until softened. Stir in taco seasoning and diced tomatoes; cook for 3 - 5 minutes.
Press refrigerated biscuits into the prepared baking dish. Bake the biscuit base for 5 minutes.
Spoon beef mixture over the biscuit crust. Mix sour cream, mayonnaise, and ranch dressing mix; spread over the beef layer. Sprinkle shredded cheese and add jalapenos (if using). Bake for 25 - 30 minutes or until the cheese is bubbly and golden.
